Here’s a behind-the-scenes look at how we make it from scratch.
Growing Our Peppers Naturally
The journey begins in our garden, where we grow ghost peppers using natural, pesticide-free methods. Our commitment to chemical-free gardening ensures that the peppers are as pure as the honey they’ll eventually steep in.
Ghost peppers thrive in our rich soil, benefiting from careful tending throughout the growing season. When the peppers are ripe and vibrant, we harvest them by hand to ensure only the best make it to the next step.
If you can't grow your own ghost peppers, no problem. Source some at a local Farmer's market or your nearest Whole Foods. No matter what, full peppers are better than flakes.
Preparing the Peppers
After harvesting, we wash the peppers thoroughly to remove any dirt or debris, then set them out to dry completely. Once dried, we carefully slice the peppers, preserving their fiery essence.
For each half-gallon jar of honey, we use ten freshly sliced ghost peppers, ensuring just the right balance of spice.
Crafting the Honey
We use only raw honey from our own hives for this infusion. To guarantee quality, we measure its moisture content with a digital refractometer.
By starting with honey that has a low moisture content, we ensure the finished product has a long shelf life and retains its rich, natural flavor.
The sliced ghost peppers are added to the honey in a glass jar, and we let the mixture sit for two weeks.
During this time, we flip the jar daily to evenly distribute the peppers’ heat and flavor.
Perfecting the Sweet Heat
After two weeks, we carefully strain out the peppers and seeds, leaving behind honey infused with bold, smoky spice. To achieve the perfect balance of heat and sweetness, we pour the infused honey into jars halfway and then top them off with raw honey.
To ensure the spicy honey blends seamlessly with the fresh raw honey, we flip the jars over for a couple of days. This simple step guarantees that every spoonful has the perfect mix of sweetness and heat.
